Artisan bread is best described by thinking about the person who makes the bread. An artisan baker is a craftsperson who is trained to the highest ability to mix, ferment, and shape and bake a hand crafted loaf of bread. They understand the science behind the chemical reactions of the ingredients and know how to provide the best environment for the bread to develop.
The engine that makes our sourdough bread rise is the sourdough ‘culture’ or leaven.It is simply created by mixing wholegrain or whole meal organic flour with filtered water and leaving it for a few days to ferment. It is the wild yeast that lives just underneath the bran that will self-start the primary fermentation and it is this wild yeast that will rise the dough.
